Cornbread

Originally in the 1991 cookbook

Ingredients

1 cup yellow cornmeal
1/2 tsp salt
1 cup flour
1 cup milk
2 tbsp sugar
1/4 cup shortening
4 tsp baking powder
1 egg

Directions

  1. Heat oven to 425 degrees F.
  2. Grease square pan, 8x8x2 or 9x9x2 inches.
  3. Blend all ingredients about 20 seconds. Beat vigorously 1 minute.
  4. Pour into pan. Bake 20-25 minutes or until golden brown.
Makes 9-12 servings.
