Ingredients
2 cups sugar1 1/2 cups oil
4 eggs
3 cups raw carrots, finely grated
2 cups flour
2 tsp baking soda
2 tsp cinnamon
1 pinch salt
Directions
- Heat oven to 350 degrees F degrees.
- Beat sugar, oil and eggs
- Add remaining ingredients.
- Grease loaf pan and bake for 45-50 minutes
Frosting
- Beat: 1 8-oz package cream cheese, 1 package powdered sugar, 1 cube margarine.
- Add: 1 tsp vanilla and 1 cup chopped walnuts.
- Keep cake covered or carrots turn green.
